For many years, I have enjoyed eating pierogies. These stuffed dumplings, which are closely associated wth Polish cuisine, although not exclusively, are quite often shaped like half- moons, or crescents and are most commonly filled with potatoes, and / or sauerkraut and various cheeses. Mrs T’s (R) Pierogies are essentially half- moon- shaped pillows of pasta that are stuffed with creamy mashed potatoes and other ingredients. If you’ve never eaten any of these delightful creations, the combination of flavors may sound odd, but in actuality, these stuffed dumplings are highly flavorful. Sometimes, I like to bake them in the conventional oven, although more often than not, I like to gently boil them in water.
Once, I even boiled them in chicken stock, which produced a wonderful flavor. Besides boiling or baking them, these pierogies can also be heated by means of grilling, microwaving or sauteeing. One thing that I really like about Mrs T’s (R) Pierogies is that because they are made with both potatoes and pasta, they are very adaptable. Sometimes, I bread them, with egg- wash and bread crumbs. then fry or bake them and serve with tomato sauce. At other times, I boil them and serve topped with gravy alongside grilled or baked chicken, pork or beef. They are great when baked into a casserole with left- over meats, vegetables and a cheese sauce, or just plain, with a little bit of salt and pepper, and maybe a bit of butter, margarine, olive oil or vegetable oil spread.
