Having a dinner party, and need a vegetarian dish for one of your friends who’s a vegetarian? If you do, You have come to the right place. I am going to show you how to make an easy Italian cucumber pasta salad from your own kitchen that your vegetarian friend will be sure to love. This recipe is filled with bright fresh herbs and veggies of all kinds blended in with a lite refreshing Italian dressing.
To begin this dish you will need a large bowl, a pot full of cold water, a box of spiral pasta, a bottle of Italian dressing, a large seedless cucumber, salt and pepper, a handful of green cilantro, a red pepper, and one red onion. You will then begin to chop up all your veggies on a cutting board into tiny bite sized chunks, but don’t cut them to small. You will want your friend to be able to see what kind of veggies you have used in the dish just in case she wants to make it herself. Then you will chop up your green cilantro and add into the dish as well.
The second step to this dish is adding all your veggies and chopped cilantro into one large bowl and combined them together. Next sprinkle a teaspoon of salt and pepper on the top of your veggies and mix in well. After you will pour a half a cup of your Italian dressing into the bowl of seasoned veggies and mix it into the dish until all your veggies are coated with dressing. This will insure all your veggies absorb the flavor of the dressing and spices.
While your veggies are soaking in the dressing you will them take your pot of cold water and boil the water on medium heat on top of your stove. Once your water has come to a boil you will dump your spiral pasta into the pot. The pasta usually takes about 10 to 12 minutes to cook. By then your pasta should be cooked. You will now want to removed the pot of cooked pasta from the stove and drain all the water out using a strainer. Now you will want to run your pasta under cold water for about 3 to 5 minutes until the pasta is cold. You could also place it into the refrigerator for a few minutes as while, but it will take a bit longer to cool.
The third step to this dish is to take your cooled cooked pasta and dump it into your seasoned dressed veggies and combined the pasta into the veggies and dressing. You will then take another 1/2 cup of Italian dressing and pour that all over the top of your combined pasta and veggies and stir until all pasta is coated with the Italian dressing. Once all ingredients is combined together you will want to place your Italian Pasta Salad into the refrigerator for about an hour to allow your pasta to soak up all the dressing.
Your fourth and last step to this dish is to take it out of the refrigerator and serve to your Vegetarian friend. You may also top your Italian Pasta Salad with Parmesan cheese for s special twist on the dish, But only if your friend likes cheese.
